Blueberry Tiramisu
Ingredients
Blueberries: 1.5 pints, fresh, cleaned, and rinsed
Blueberry Jam: 1.5 cups
Lady Fingers: 1 pound
Lemon Juice: 2 tablespoons
Lemon Zest: Zest of 1 lemon
Vanilla Extract: 1 teaspoon
Granulated Sugar: 1 cup
Powdered Sugar: 1.5 cups
Mascarpone Cheese: 1 pound
Cream: 1.5 cups
Prosecco: 4-6 tablespoons (optional, can substitute with orange or lemon juice)
How to Prepare
In a large mixing bowl, whip 1.5 cups of cream until soft peaks form.
Gradually add 1 cup of granulated sugar and 1 teaspoon of vanilla extract. Continue to whip until combined.
Gently fold in 1 pound of mascarpone cheese until smooth. Set aside.
In another bowl, combine 1.5 cups of blueberry jam with the zest of 1 lemon.
Add 2 tablespoons of lemon juice and 4-6 tablespoons of Prosecco. Mix well. (Adjust the amount of Prosecco to taste).
Take a large spoonful of the mascarpone mixture and spread it evenly on the bottom of your serving dish.
Quickly dip each lady finger into the blueberry mixture (don’t soak too long) and place them in a single layer over the mascarpone mixture in the serving dish.
Spread another layer of the mascarpone mixture over the lady fingers.
Sprinkle a handful of fresh blueberries over the mascarpone layer.
Repeat the layering process (lady fingers, mascarpone mixture, fresh blueberries) until you reach the top of the dish.
Cover the tiramisu and refrigerate for at least 3 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
Remove from the refrigerator and cut into squares to serve.
Garnish with additional fresh blueberries and a sprinkle of lemon zest if desired.
