Blueberry Pie
Ingredients
4 pints of Blueberries
2 Pie crusts
1 cup of Sugar
2 tbsp. of Lemon Juice
1 tsp. Vanilla
1 ½ tbsp. of Cornstarch
A “pinch” of Nutmeg
3 tbsp. of Butter
1 Egg wash with small amount of milk
How to Prepare
Preheat oven to 375 degrees
In a pan, add the Blueberries and Lemon Juice, mix
Add in Vanilla, mix
Add in Sugar, mix
Place the pan of the stove to heat for a couple of minutes until the liquid separates
Add in Nutmeg and Butter, mix
Heat until bubbling
Once bubbling, add Cornstarch with Lemon Juice until smooth
Mix with Blueberries
Turn off heat, let thicken while cooling for 30 minutes
After 30 minutes, take the egg wash to coat the bottom and sides of the Piecrust
Add Blueberries into Piecrust
Add top of Piecrust and remove off any excess crust
Fold both crusts on top of the pie for ventilation
Add Egg wash to the top of Piecrust and sprinkle some Sugar over it
Bake in the oven for 45-60 minutes
Check every 15 minutes
Remove from the oven and let cool for 30-40 minutes
