World's Best Pickled Red Onion Recipe

Ingredients

  • 2 medium red onions

  • 1 cup apple cider vinegar (½ cup per onion)

  • 1½ cups water (¾ cup per onion)

  • 2½ teaspoons sea salt (1+ teaspoon per onion)

  • 2½ tablespoons sugar (1+ tablespoon per onion)

  • 1 garlic clove, thinly sliced

  • A glass jar with lid (for storing)

How to Prepare

  1. Peel and cube the onions, then dice them with a food processor (or slice thinly by hand).

  2. Place onions in a large sauté pan, add the water, cover with a lid, and steam on low heat for 10 minutes.

  3. Remove the lid and cook for another 3–5 minutes to evaporate some water. Onions should be translucent and soft.

  4. Pour the vinegar into a clean jar.

  5. Add the garlic slices to the jar.

  6. Transfer the hot onions and their cooking liquid into the jar.

  7. Stir in the salt and sugar until dissolved.

  8. Place the lid on loosely and let the jar cool to room temperature.

  9. Once cooled, seal tightly and refrigerate for at least 2–3 hours before serving.

  10. Enjoy within 2 weeks (unless canned for long-term storage).
