Spaghetti with Walnut Pesto

Ingredients

  • Spaghetti

  • Walnuts (1 cup)

  • Garlic (3 cloves)

  • Pecorino Romano Cheese (1 cup, grated)

  • Parsley (2 cups)

  • Vito and Joe’s Olive Oil

  • Salt (1tbsp.)

  • Pepper (1 tbsp.)

How to Prepare

  1. Fill a pot with water to boil the pasta, make sure to salt your water.

  2. Peel your garlic and add it to your food processor.

  3. Add your walnuts, salt, and pepper to the food processor and pulse it 2-3 times.

  4. Cut your parsley to remove most of the stem and add it into your food processor. Again pulse it 2-3 times.

  5. Grate your Pecorino Romano cheese and add it to the food processor. Pulse 2-3 times.

  6. Add approximately half a cup of olive oil to the processor and pulse again.

  7. Add the pesto to a pan on low heat to warm the sauce up, stirring every few minutes.

  8. Add 1 lb. of pasta to the boiling water and let it cook for 8-9 minutes, until just shy of al dente.

  9. Add your pasta to the pan with the pesto sauce.

  10. Stir the pasta and pesto mixture.

  11. Add about half a cup of pasta water to the pan and let it sit for a minute.

  12. Plate the spaghetti and grate some Pecorino Romano over top to finish it off. Enjoy!
