Italy’s Best Fried Shrimp
Ingredients
2 lbs. raw, pre-cleaned shrimp (or frozen if you can’t find raw; thaw them first if using)
2 cups pastry flour or all-purpose flour
1/2 cup corn starch
1 tsp. red chili
1 tsp. salt
1 tsp. fresh ground pepper
1 qt. peanut oil or light olive oil (not extra virgin or virgin olive oil; for frying, you want to use light olive oil that’s more golden in color due to its higher smoke point)
How to Prepare
Add 1 qt. of peanut or light olive oil to a dutch oven and heat to 350 degrees.
In a large bowl, add 2 cups flour, 1/2 cup corn starch, 1 tsp. red chili, 1 tsp. salt, and 1 tsp. fresh ground pepper. Mix together.
Line a plate with a few layers of paper towel.
Drop the shrimp one by one into the flour mixture and lightly cover on all sides. Set aside on a plate.
Drop each shrimp carefully into your heated oil and fry for 3-5 minutes until lightly golden. Using a spider strainer or a slotted spoon, remove the shrimp from the oil and set on the plate lined with paper towels.
Spread the shrimp out into one layer and sprinkle with salt.
