Gnocchi with Sage Butter Sauce
Ingredients
Gnocchi:
1lb Potatoes (3-4)
½ cup Pastry Flour
(Unenriched and Unbleached)
2 Eggs
Pinch of Nutmeg
Parmesan Cheese
Sauce:
3 tbsp Butter
Sage
Salt
1 clove Garlic
Fresh Ground Pepper
4 tbsp Olive Oil (Vito & Joe's!)
How to Prepare
Gnocchi:
Preheat the oven to 350-375 degrees
Place potatoes on paper towel, rub and cover potatoes with olive oil
Bake potatoes for about 1 hour in oven
Peel potatoes then chop into fourths
Use ricer, place 1-2 small potato chunks into ricer and squeeze
(should be light and airy)
Repeat this process for all potato chunks ( do not overwork)
Make a 'well' of riced potato, then crack 1 whole egg and 1 egg yolk into the middle
Add a pinch of salt, nutmeg, pepper and splash of olive oil then mix inside the 'well'
Delicately incorporate potato into the mixing ( do not push down on fork - keep light) until potato is covered with egg mixture
Create another 'well' and add flour, mix with fork/baker scraper (should have binding texture)
Use hands delicately to lightly roll/knead mixture into roll
Cut roll into half (x3), then roll dough into about ½ inch diameter
Cut into small pieces (½ inch)
(use baker scraper)
Use gnocchi board or fork to create traditional lines to create fold on gnocchi piece and grooves
Continue process until you have cut all of your dough into many small pieces of gnocchi!
Begin creating sage butter sauce
(See Below)
Once pot of boiling water on stovetop has started begin adding gnocchi pieces into the pot
(about 10-15 pieces at a time)
The gnocchi pieces are finished cooking once they float to the top of the boiling water
(each should only take a few minutes)
Add light splash of olive oil to bottom of bowl
Strain the gnocchi pieces before placing in bowl
Use a new saucepan to sauté gnocchi pieces before adding the sauce
Pour a splash of olive oil and 2 tbsps of butter mixture to bottom of sauce pan
Add your gnocchi pieces to saucepan out of your bowl
Gently mix gnocchi as they sauté to a light brown
Pour gnocchi into bowl, add the sage butter sauce and top it off with shredded parmesan and a few small sage leaves
Sauce:
Use saucepan on low heat (just above simmer)
Pour 4 tbsp of olive oil, garlic (use garlic press), 3 tbsp butter and pinch of salt
Stir lightly for about 2-3 minutes
Turn heat off and place about 6-8 sage leaves into saucepan for about 15 minutes
