Garlic Mashed Potatoes

Ingredients  

Mashed potatoes:

  • Russet potatoes (8)

  • Parmesan cheese (½ cup)

  • Romano cheese (½ cup)

  • Mascarpone cheese (4 tbsp.)

  • Nutmeg (¼ tsp.)

  • Vito & Joe’s Extra Virgin Olive Oil

  • Unsalted butter (4 tbsp.)

  • Heavy cream (½ cup)

  • Roasted garlic (4 cloves)

  • Freshly ground black pepper

  • Salt

Toppings:

  • Breadcrumbs (½ - ¾ cup)

  • Parmesan cheese (½ cup)

  • Romano cheese (½ cup)

  • Butter (4 tbsp. – melted)

  • Salt (½ tsp.)

  • Freshly ground black pepper (to taste)

    

How to Prepare

  1. Preheat the oven to 350 degrees.

  2. Bake the potatoes in the oven for about 50 – 75 minutes.

  3. When the potatoes are finished cooking, peel them.

  4. Cut the peeled potatoes into quarters then rice into a large bowl using a potato ricer.

  5. When ricing the potatoes, also use the ricer to rice the roasted garlic.

  6. Once all potatoes and the garlic are riced, add the heavy cream, butter, nutmeg, mascarpone cheese, a ½ cup of parmesan cheese and a ½ cup of Romano cheese.

  7. Mix well using a wooden spoon until all the ingredients are fully incorporated.

  8. If you feel the potatoes are too thick, you can additional heavy cream.

  9. Once all the ingredients are fully incorporated, add the salt, freshly ground black pepper to taste and a splash of Vito & Joe’s Extra Virgin Olive Oil.

  10. Put the potatoes into a large casserole dish and set aside.

  11. In a medium bowl, mix your topping ingredients together and then spread evenly over the potatoes.

  12. Turn the oven to a broil and broil for 5 – 10 minutes until the topping is nice and browned. Enjoy!
