Focaccia Pizza with Figs and Goat Cheese
Ingredients
1 lb Pizza Dough
10 oz Dried Figs
2 Onions
2 cloves of Garlic
Rosemary
2 tbsp Butter
Salt
Port Wine
Fresh Ground Pepper
Olive Oil
How to Prepare
Chop the onions into large slices and mince the garlic
In a cast iron pan, add 2 -3 tbsp of olive oil and add the onions, garlic, 2 tbsp of butter and pinch of salt
Turn the heat on medium-low heat and put a lid on it to caramelize the onions
Remove the stems for the figs and cut them in halves or thirds
In a small saucepan, add the figs, pinch of salt and ⅓ - ½ cup of port wine
Cover the saucepan, cook on medium heat for about 15 minutes
(bring to a light boil)
Check on your cast iron pan, keep stirring until onions are caramelized
Check on saucepan, stir figs well then cover top and turn off the burner
(let sit for 25 minutes)
Next soon drain the figs into the onion mixture in cast iron pan
(do not dump liquid into pan)
Cover the cast iron pan with no heat and let sit for 5 minutes
Pour mixture into bowl and set aside
(this is your pizza sauce!)
Preheat the oven to 375 degrees and bake your cast iron pan for 10 minutes
Add 3 tbsp olive oil to the bottom of the pan and spread the olive oil around the pan with the dough
(pizza dough should be room temp)
The dough should be the same thickness around entire pan bottom
(flip dough to get olive oil on both sides)
'Dimple' the dough with your fingers so it stays in the shape of the pan and doesn't shrink and adds flavor
Lightly salt and pepper the dough then add the fig and onion mixture
Spread the mixture across the top of the dough and lightly press down in center
Bake for about 15-20 minutes at 375 degrees
Pull rosemary off their stems and lightly chop and make sure goat cheese is at room temperature
After about 12 minutes, take the pizza out of the oven and the goat cheese and rosemary over the top
Let pizza bake in oven for 5-8 more minutes
Let cool then enjoy!
