Cornbread Northern Italy Style

Ingredients

  • 1 cup cornmeal, course-ground

  • 1 cup flour, all-purpose or pastry

  • 3 ½ tsp. baking powder

  • 1 tsp. salt

  • 1 cup whole milk

  • ½ cup honey

  • 1 egg, whisked

  • ⅓ cup and 1 tbsp. Vito & Joe’s Olive Oil

How to Prepare

  1. Preheat an oven to 400°F.

  2. Into a medium bowl, sift 1 cup cornmeal, 1 cup flour, 1 tsp. salt, and 3 ½ tsp. baking powder. Mix everything together. Make a well in the center and whisk in 1 egg, 1 cup whole milk, ½ cup honey, and ⅓ Vito & Joe’s Olive Oil. Stir well until a smooth batter forms. Let rest 15 to 20 minutes.

  3. Coat a cast iron pan with 1 tbsp. of Vito & Joe’s Olive Oil. Pour in the cornbread batter. Put in the oven for around 20 to 25 minutes and check periodically. When a toothpick comes out dry, take it out of the oven.

  4. Let cool a bit, cut, and serve!
